- 1 cup fresh or frozen raspberries
- 2 cups water
- 1/4 cup granulated sugar (adjust to taste)
- Juice of 1 lemon
- Ice cubes
- Fresh raspberries and mint leaves for garnish (optional)
Instructions:
- In a small saucepan, combine the raspberries, water, and granulated sugar. Bring the mixture to a gentle boil over medium heat.
- Once boiling, reduce the heat to low and let the mixture simmer for about 5 minutes, or until the raspberries have softened and released their juices.
- Remove the saucepan from the heat and let the raspberry mixture cool slightly.
- Strain the raspberry mixture through a fine-mesh sieve into a pitcher, pressing down on the raspberries to extract as much liquid as possible. Discard the solids.
- Stir in the lemon juice to the strained raspberry liquid and mix well. Adjust the sweetness by adding more sugar if desired.
- Chill the raspberry drink in the refrigerator until cold.
- To serve, fill glasses with ice cubes and pour the chilled raspberry drink over the ice.
- Garnish each glass with fresh raspberries and mint leaves if desired.
- Stir gently before serving.
