Refreshing raspberry drink

Ingredients:

  • 1 cup fresh or frozen raspberries
  • 2 cups water
  • 1/4 cup granulated sugar (adjust to taste)
  • Juice of 1 lemon
  • Ice cubes
  • Fresh raspberries and mint leaves for garnish (optional)

Instructions:

  1. In a small saucepan, combine the raspberries, water, and granulated sugar. Bring the mixture to a gentle boil over medium heat.
  2. Once boiling, reduce the heat to low and let the mixture simmer for about 5 minutes, or until the raspberries have softened and released their juices.
  3. Remove the saucepan from the heat and let the raspberry mixture cool slightly.
  4. Strain the raspberry mixture through a fine-mesh sieve into a pitcher, pressing down on the raspberries to extract as much liquid as possible. Discard the solids.
  5. Stir in the lemon juice to the strained raspberry liquid and mix well. Adjust the sweetness by adding more sugar if desired.
  6. Chill the raspberry drink in the refrigerator until cold.
  7. To serve, fill glasses with ice cubes and pour the chilled raspberry drink over the ice.
  8. Garnish each glass with fresh raspberries and mint leaves if desired.
  9. Stir gently before serving.
