Italian cold cut sambo

Start with a base of sun-dried tomato focaccia I stuffed with mozzarella then added:

• Pesto

• Mortadella

• Smoked salami

• Bresola

• Speck

• Burrata (with pepper)

• Heirloom tomato (with salt)

• Rocket tossed with olive oil and lemon juice

• Balsamic glaze

• Sun-dried tomato paste
