Instructions

1. Prepare the Filling:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté until fragrant and translucent, about 3-4 minutes.
  3. Add the bell pepper and zucchini, and cook until they begin to soften, about 5 minutes.
  4. Stir in the corn, black beans, ground cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 3-4 minutes until the vegetables are tender and well combined.
  5. Squeeze in the lime juice and stir in the chopped cilantro. Remove from heat and set aside.

2. Prepare the Salsa:

  1. In a medium bowl, combine the chopped tomatoes, red onion, jalapeño (if using), cilantro, lime juice, and salt.
  2. Mix well and set aside to let the flavors meld.

3. Prepare the Creamy Avocado Sauce:

  1. In a blender or food processor, combine the avocado, sour cream or Greek yogurt, garlic clove, lime juice, salt, and pepper.
  2. Blend until smooth. If the sauce is too thick, add a little water to reach the desired consistency.

4. Assemble the Tacos:

  1. Warm the tortillas in a dry skillet over medium heat or in the microwave until pliable.
  2. Place a generous spoonful of the vegetable filling in the center of each tortilla.
  3. Top with shredded lettuce or cabbage, diced tomatoes, diced red onion, and avocado slices.
